If you are what you eat, I would probably be an egg. I eat eggs nearly every day!
After experimenting with various cleanses, paleo and whole 30 diets, I have learned how to eat real food every day. I don’t follow the guidelines on those rigorous diets anymore, but they made me realize that I love to eat REAL food, FRESH food! I started focusing on eating this way and I’ve almost quit eating processed food entirely (…almost). It can be hard at first, but once you get into a rhythm and habit, it becomes much easier.
Thats where eggs come in, they are so convenient. It’s hard to defrost tons of meat for lunch and/or dinner every day, not to mention I don’t want to actually eat meat that often (in fact, I eat vegetarian meals a few times a week believe it or not). I love eggs because they add that fatty/rich flavor that is missing in vegetables. I often eat them sunny side up during lunch time over greens, leftover potatoes/grains or on avocado toast.
Last week, I asked the Hubs to go to the grocery store for me and pick out some fresh vegetables for the week. Nothing specific in mind, just whatever looked good. He came home with 4 HUGE BUNDLES of turnip greens! So, I have been eating lots of turnip greens and decided to take a photo to share one of my typical lunch meals: Fried eggs served on top of sautéed turnip greens (seasoned with a squeeze of lemon), avocado, tomatoes, chives, and herbs. If your from the South, feel free to douse it with hot sauce. It’s a super healthy, easy and satisfying lunch!
